The products I use for decorating cakes are fondant, butter cream frosting, color flow icing, royal icing.  Everything is edible.   

Fondant:  Fondant is made from marshmallows and powdered sugar.  It covers the cake and is very smooth.  I have used fondant to make cakes that look like books (graduation cakes) and cakes that look like packages.  It can be used on any cake that you want a very smooth surface.  It looks very pretty.  It is also used to make bandanas, pleats, ruffles and drapes on cakes.  Fondant is also used for the characters, cars, toys, etc.  Flavors such as almond, strawberry, coconut, etc can be added to the fondant.  I have also used chocolate fondant to cover a cake (i.e., gift cake under novelty cakes). If I use fondant to cover a cake I use home made fondant which tastes much better than the commercially made fondant.  Characters, flowers, bows, etc are all made from commercial fondant. I would not recommend covering a cake in fondant if the weather is very hot and humid.

Gum Paste:  The flowers made out of gum paste are very realistic looking and very pretty.  Sometimes these flowers are attached to floral wire and the stems are wrapped.  They are not meant to be eaten.  They are made from edible material, however, a lot of the time they include inedible items, such as floral wire, stamens, etc.  The fairy and the butterfly are made out of gumpaste and hand painted with icing colors. I did brush the fairy and the butterfly with luster dust.

Chocolate Paste:  These flowers are made from white chocolate and glucose (corn syrup). They are hand painted and a flavorless luster dust is brushed on to add color and depth.  Everything is edible and tastes delicious.  The flowers turn out looking very realistic and very pretty.  They don't hold up well in very hot weather.

Color Flow:  Color flow is a type of icing that hardens into a candy type consistency.  It reminds me of the candy decorations you can buy in the store to put on cakes.  I use it to make cartoon characters such as the Nursery Rhyme Ball cake figures, My Little Pony Cake and the Baby Einstein characters.

Butter Cream Frosting:  I make my frosting fresh. I have several different flavors such as hazelnut, butter, almond, strawberry, lemon, coconut, orange, dutch pastry, rum, etc.  In chocolate frosting I usually add black coffee, and melt dark chocolate to add to it.  I am sure that anything you want, I can come up with.

 Fillings:  Fillings are available for cakes.  I have raspberry, almond, lemon, bavarian cream, chocolate, etc.  If the filling is extra rich or takes a lot of ingredients to make, I will add .20 per serving. 

Cake Flavors:  Any cake flavor is available.
